The nameless shop at 76, Cintra Street (日本街) must serve the crispiest and tastiest You Tiao (You Char Koay). The Malay community refers to this deep-fried breadstick as cakoi or Chinese crullers.

One of the town’s oldest businesses is currently managed by Madam Chew (left), who learned the craft from her father. This You Tiao has a startling 80 years of history if one counts the days of her father. Early on, they were conducting business out of a push cart stand at People’s Park across from Cintra Street. They didn’t move into a permanent shop to carry on the business until 17 years ago. Their You Tiao are particularly well-known for being longer and thicker than typical, and for RM1 each, they offer great value.

The You Tiao’s crispness and perfect flavour depend on the use of fresh, high-quality ingredients. Because that’s where the formed doughs will finally be fried, oil and heat control are also very important.

As soon as the You Tiao is finished, a tiny hole is pierced through the bottom to allow any extra oil to drop off while they are resting in the basket. Thus, the You Tiao in this location tastes less oily and can even be stored overnight for breakfast the following day.
