Koay Chiap, a delicacy rarely available in Penang, is famous as one of the most well-known vendors in Air Itam. This dish has a distinct form of “noodle” that blends elements of pan mee and koay teow. The end product is a thicker, more uniquely textured noodle. Koay Chiap consists of duck meat, intestines, coagulated blood, and a hard-boiled duck egg. These ingredients are paired up with a savoury duck-infused soup with a darker colour. Thai chilli and soy sauce were offered beside the dish to enhance it.
